Get out the pots and pans! And lucky you, we provide then in our Full Kitchen accommodations. We have a lot of utensils, but don’t expect an orange zester in our drawers. Just the basics. So get the kids and the whole family around the kitchen and start cooking up some of these great recipe ideas.

Bacon N’ Egg Breakfast Pizza
Prep Time: 10 Minutes
Cook Time: 25 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 3/4 (8 ounce) package refrigerated crescent rolls
  • 9 bacon strips, cooked and crumbled
  • 3/4 cup frozen shredded hash brown potatoes
  • 1/2 cup and 1 tablespoon shredded Cheddar cheese
  • 3 eggs
  • 1 tablespoon and 1-1/2 teaspoons milk
  • 1/4 cup and 2 tablespoons grated Parmesan or Romano cheese

DIRECTIONS:

1. Unroll crescent dough into one long rectangle. Press onto the bottom and 1/2” up the sides of a greased 13” x 9” x 2” baking pan. Seal seams and perforations. Sprinkle with bacon, potatoes and cheddar cheese.

2. In a bowl, beat eggs and milk. Pour over cheddar cheese. Sprinkle with Parmesan cheese.

3. Bake, uncovered, at 375 degrees for 25-30 minutes or until eggs are completely set.

 

No Bake Cereal Cookies
Prep Time: 10 Minutes
Cook Time: 10 minutes
Feeds: Up to 12 servings

INGREDIENTS YOU’LL NEED:

  1. 1 cup white sugar
  2. 1 cup white corn syrup
  3. 1 cup peanut butter
  4. 6 cups crispy rice cereal

DIRECTIONS:

1. Bring sugar and syrup to a boil. Add peanut butter and stir well. Remove from heat. Stir in cereal.

2. Pat into a 9” x 13” pan.

Ready made frosting in your favorite flavor tastes good spread on the top.

 

Fun & Festive Breakfast Casserole
Prep Time: 10 Minutes
Cook Time: 45 Minutes
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 12 slices white bread
  • 1 (approximately 11 ounces) can white kernel corn, drained
  • 1 (4 ounce) can chopped green chiles, undrained
  • 2 cups (8 ounces) shredded Monterey Jack cheese or Mexican blend
  • 4 eggs, beaten
  • 2 cups milk
  • 1 teaspoon salt

DIRECTIONS:

1. Remove crust from bread; place 6 slices in a lightly greased 12x8x2-inch baking dish.

2. Spoon half of corn and half of chiles over the bread; sprinkle with half of the Monterey Jack cheese. Layer remaining bread, corn, chiles, and cheese.

3. Whisk together eggs, milk, and salt; pour over last layers. Cover and refrigerate casserole overnight, about 8 to 10 hours. Remove from refrigerator; let stand 30 minutes. Bake, uncovered, at 350° for 40 to 45 minutes.

 

The Three Bear's Porridge
Prep Time: 5 Minutes
Cook Time: 10 Minutes
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 3 cups water
  • 1 cup powdered milk
  • 1 1/2 cups rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raisins (optional)
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 4 teaspoons butter
  • 1 cup milk
  • 3 tablespoons honey

DIRECTIONS:
1. In a large saucepan, bring the water to a boil. Combine the powdered milk, oats and cinnamon; quickly stir into the boiling water. Return the mixture to a boil, then reduce heat and simmer for 5 to 10 minutes, or until the mixture is the desired thickness.
2. Remove from heat and mix in the raisins and vanilla. Beat in the eggs one at a time, mixing well after each. The hot porridge will cook the eggs completely.
3. Divide the porridge between 4 bowls. Top each one with a teaspoon of butter, 1/4 cup of milk, and drizzle with honey.

 

Grandma’s Best Pancakes
Prep Time: 8 Minutes
Cook Time: 20 Minutes
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1 large egg
  • 5 teaspoons sugar
  • 1 1/3 cups milk
  • 1 cup flour
  • 3/4 teaspoon baking powder
  • 1 1/2 tablespoons vegetable oil

DIRECTIONS:
1. In a bowl, whisk together egg, sugar and half of milk (2/3 cup).
2. Add the flour and mix thoroughly.
3. Add remaining milk (2/3 cup) and baking powder. Consistency should be like thick cream.
4. Add 1-1/2 tsp oil
5. Beat until smooth.

Pour about a soup spoon sized amount onto a pre-heated lightly greased frying pan or griddle. Flip over and cook until lightly brown.

Serve with your favorite toppings and enjoy!

Lemon Chicken with a Kick
Prep Time: 10 Minutes
Cook Time: 15 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 6 skinless, boneless chicken breast halves—cut into 2 inch pieces
  • 3/4 lime, juiced
  • 1-1/2 lemon, juiced
  • 3/4 cup Dijon mustard
  • Freshly ground black pepper
  • Creole-style seasoning to taste

DIRECTIONS:
1. Place chicken in a skillet over medium heat.
2. Pour in lime and lemon juices, and stir in Dijon, black pepper, and Creole-seasoning. Cook, turning chicken occasionally, until the chicken pieces are done, about 15 minutes.

Quick and easy as pie!

 

Tater Tot Bake
Prep Time: 20 Minutes
Cook Time: 40 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 1 pound ground beef
  • 1 onion, chopped
  • Salt and pepper to taste
  • 1/2 (32 ounce) package tater tots
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded Cheddar cheese

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet, brown the ground beef with the onions. Drain excess fat, and season with salt and pepper to taste.
3. Spread the beef mixture evenly over the bottom of a 2 quart casserole dish. Arrange tater tots evenly over beef layer.
4. In a small bowl, stir the soup into the milk until smooth; pour over tater tot and beef layers. Sprinkle Cheddar cheese evenly over the top.
5. Bake in preheated oven for 30 to 40 minutes, until cheese is bubbly and slightly brown.

Serve with a smile!

 

Try-it Tuna Salad
Prep Time: 10 Minutes
Ready In: 10 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 1-1/2 (7 ounce) cans white tuna, drained
  • 1/2 cup mayonnaise
  • 2 tablespoons Parmesan cheese
  • 1/4 cup and 2 teaspoons sweet pickle relish
  • 1/4 teaspoon diced onion
  • 1/2 teaspoon curry powder
  • 1 tablespoon and 1-1/2 teaspoons dried parsley
  • 1-1/2 teaspoons dried dill weed
  • 1-1/2 pinches garlic powder

DIRECTIONS:
1. In a medium bowl, stir together the tuna, mayonnaise, Parmesan cheese, relish and onion. Season with curry powder, parsley, dill and garlic powder. Mix well.

Serve with crackers or on a sandwich. Enjoy!

 

BBQ Beef Casserole
Prep Time: 15 Minutes
Cook Time: 25 Minutes
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 1-1/4 pounds ground beef
  • 2/3 large onion, diced
  • 2/3 green bell pepper, seeded and diced
  • 2/3 (10 ounce) can whole kernel corn, drained
  • 1/3 cup barbecue sauce
  • 2/3 (14.5 ounce) can diced tomatoes, drained
  • 2 (8.5 ounce) packages corn bread mix

DIRECTIONS:
1. Preheat the oven to 400 degrees F (200 degrees C).
2. Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned.
3. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9” x 13” baking dish.
4. Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.
5. Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

Serve up to the family and enjoy!

 

Veggie & Tortilla Stew
Prep Time: 15 Minutes
Cook Time: 15 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 1-1/2 (19 ounce) cans green enchilada sauce
  • 2-1/4 cups water
  • 1-1/2 cubes vegetable bouillon
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1-1/2 (15 ounce) cans pinto beans, drained and rinsed
  • 3/4 (16 ounce) can diced tomatoes
  • 1-1/2 cups frozen corn
  • 3/4 cup vegetarian chicken substitute, diced (optional)
  • 6 (6 inch) corn tortillas, torn into strips
  • 1 tablespoon and 1-1/2 teaspoons chopped fresh cilantro
  • Salt and pepper to taste

DIRECTIONS:
1. In a pot, mix the enchilada sauce and water.
2. Dissolve the bouillon cube in the liquid, and season with garlic powder, chile powder, and cumin. Bring to a boil, and reduce heat to low.
3. Mix in the beans, tomatoes, and corn. Simmer until heated through.
4. Mix in vegetarian chicken and tortillas, and cook until heated through. Stir in cilantro. Season with salt and pepper to serve.


Bitty Chedder Meat Loaves
Prep Time: 10 Minutes
Cook Time: 45 Minutes
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 1 egg
  • 3/4 cup milk
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup quick-cooking oats
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 pound lean ground beef
  • 2/3 cup ketchup
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoon prepared mustard

DIRECTIONS:
1. In a bowl, beat the egg and milk. Stir in cheese, oats, onion, and salt. Add beef and mix well.
2. Shape into eight loaves; place in a greased 13x9 baking dish.
3. Combine ketchup, brown sugar, and mustard; spoon over loaves.
4. Bake, uncovered, at 350 degrees for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.

Pumpkin Pie Ice Cream
Prep Time: 10 Minutes
Cook Time: No cooking. Just Freezing!
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 1 prepared graham cracker pie crust
  • 1 pint vanilla ice cream, softened
  • 16 oz. canned pumpkin
  • 1 cup whipped cream
  • 3/4 cup sugar
  • 2 tsp. pumpkin pie spice
  • 1/2 tsp. salt

DIRECTIONS:
1. Fill pie crust with ice cream; freeze until solid.
2. In medium bowl, combine pumpkin, whipped cream, sugar, pumpkin pie spice and salt. Spoon mixture over frozen layer of ice cream in crust; freeze until solid.
3. Remove pie from freezer and place in refrigerator one hour before serving.

Slice and serve with additional whipped cream or your favorite holiday topping!

 

Fresh & Easy Blueberry Cake
Prep Time: 15 Minutes
Cook Time: 1 hour
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 3 large eggs
  • 1/4 cup granulated sugar
  • 1/3 cup canola or corn oil
  • 1 cup sour cream
  • 2 lemons (juiced) or about 1/4 cup lemon juice
  • 1 box (18.25 ounces) Yellow or Lemon cake mix with pudding in the mix
  • 2 cups fresh cleaned blueberries

DIRECTIONS:
1. Grease and flour a 10-inch tube pan. Heat oven to 350°
2. Beat eggs with sugar until light; beat in the oil, sour cream and lemon juice. Continue beating until smooth.
3. Slowly blend in the cake mix then beat until well blended. Fold in the blueberries.
4. Spoon into the prepared baking pan; smooth the top. Bake for 50 to 60 minutes, or until a toothpick comes out clean when inserted into the cake.
Dust with powdered sugar or use your favorite frosting or glaze.

 

S'Mores Bars
Prep Time: 15 Minutes
Cook Time: 25-30 minutes
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 3/4 cup butter
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 18 whole graham crackers, crushed, about 3 cups
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 8 milk chocolate bars, approximately 1 1/2 ounces each
  • 3 1/2 cups miniature marshmallows

DIRECTIONS:
1. Pre heat oven to 350°.
2. Beat butter and sugar until light and fluffy. Beat in egg and vanilla. Stir in crushed graham crackers, flour, and salt.
3. Reserve 2 1/2 cups of the graham cracker mixture, and press remaining mixture over the bottom of a greased 13x9x2-inch baking pan.
4. Arrange chocolate bars, in a single layer, over graham cracker mixture in the pan. Sprinkle with marshmallows. Crumbled reserved 2 1/2 cups graham cracker mixture over the marshmallows.
5. Bake for 25 to 30 minutes or until golden brown. Cool in pan on wire rack for 10 minutes. Cut into bars and cool completely.

This delicious treat serves about 2 dozen bars

Brekkie Casserole for One
Microwave Time: 5 minutes MEDIUM-HIGH
Feeds: Up to 1 serving

INGREDIENTS YOU’LL NEED:

  • 1 large egg - lightly beaten
  • 1 slice day-old bread - cubed
  • 1/4 cup cooked ham - diced
  • 3 Tablespoons milk
  • 3 Tablespoons shredded Cheddar cheese
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 dash Worcestershire sauce

DIRECTIONS:
1. In a large bowl, mix all ingredients until well blended. Don't over mix or the bread pieces will disintegrate.
2. Pour into a 6x6 microwave safe pan. Cover pan tightly with plastic wrap. Poke a couple holes in the plastic for venting.
3. Microwave on medium-high for about 5 minutes until egg is set. Rotate the pan midway through cooking if your microwave doesn't auto-rotate. Let the casserole set in the microwave a minute or two once cooking is complete.

 

Fruit Cobbler
Microwave Time: 5 minutes HIGH
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1 can (16 oz.) drained sliced peaches
  • 1 can (16 oz.) drained pear halves (can substitute 2 16oz. cans fruit cocktail for peaches & pears)
  • 1 cup (6 oz.) pitted prunes, halved
  • 1 tsp. grated orange peel
  • 1-1/2 cups lowfat granola cereal
  • 1/3 cup orange juice.

DIRECTIONS:
1. In 6-cup shallow microwave bowl toss peaches, pears, prunes, orange peel and orange juice.
2. Top with granola. Microwave on HIGH for 5 minutes.
3. Let stand for 2 minutes. Spoon into bowls.

Serve with plain yogurt or your favorite breakfast foods.

 

Blueberry & Almond Breakfast Pudding
Microwave Time: 3 minutes HIGH
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1/3 cup almond meal
  • 2 Tablespoons water
  • 1 egg
  • 1/4 cup blueberries - frozen or otherwise
  • Sweetener and flavoring to taste

DIRECTIONS:
1. Mix almond meal, egg, and water in a microwave-safe bowl. Microwave on high for about 45 seconds. Move the cooked part of the pudding towards the center of the bowl and add blueberries and/or fruit fixins you like
2. Microwave for about 45-60 more seconds (frozen fruit will need even longer cooking, as it will cool down the pudding).
3. Stir, eat & enjoy!

Open Sesame Broccoli
Microwave Time: 3 minutes HIGH & 4 minutes HIGH
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1/4 cup sesame seeds
  • 1 head broccoli
  • 2 tbsp. water
  • Salt and pepper

DIRECTIONS:
1. Spread the sesame seeds on paper towel. Microwave on High for 3 minutes or until the seeds turn light brown. Set aside.
2. Cut the broccoli into florets and remove the tough stems. Place the broccoli in a microwave-safe casserole with the stems pointing out. Add the water, cover tightly, and cook on High for 4 minutes.
3. Uncover and let stand for two minutes before tossing with the sesame seeds and seasoning.

 

Asian Chicken Wings
Microwave Time: 15 minutes HIGH
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 8-10 chicken wings
  • 1/3 cup soy sauce
  • 1 cup fine cracker crumbs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon ginger
  • 1/8 teaspoon ground pepper

DIRECTIONS:
1. Cut wings in half, discard tips. Rinse; pat dry with paper towels.
2. Pour soy sauce into shallow bowl; set aside.
3. In another shallow bowl, combine remaining ingredients.
4. Dip chicken in soy sauce, roll in seasoned crumbs, coating evenly.
5. Arrange chicken wings, skin side up in spoke pattern in a 9 inch round glass pie plate, placing thickest portion toward outside of plate. Cover with paper towels.
6. Cook on high 13 to 15 minutes or until chicken is tender.

 

Sweet and Sour Meatballs
Microwave Time: 20 minutes HIGH
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1 1/2 pounds ground beef
  • 1 egg
  • 1/2 cup water
  • 1/2 cup fine dry bread crumbs
  • 1 bottle chili sauce
  • 6 ounces grape jelly
  • 2 teaspoons lemon juice

DIRECTIONS:
1. Mix hamburger, egg, bread crumbs and water until well blended.
2. In a deep 3 quart casserole, combine chili sauce, grape jelly and lemon juice. Shape mixture into small meatballs and place in sauce.
3. Heat 12 minutes on full power, skim off fat, stir. Heat 8 minutes on full power until sauce bubbles and meatballs are cooked.


Mini Micro Pizza
Microwave Time: 2 minutes HIGH
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1 package of 6 English muffins
  • 1 small jar pizza sauce
  • 8 ounce package shredded Mozzarella cheese
  • 48 slices pepperoni (or meat of your choice)

DIRECTIONS:
1. Pour sauce on to open face muffins. Place 4 slices of pepperoni on each muffin. Top each muffin with a generous amount of cheese.
2. Bake in microwave for 2 minutes or until cheese is melted.

Serve and Enjoy!

 

Micro Meat Loaf
Microwave Time: 5 minutes HIGH & 20 minutes LOW
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 1 pound ground chuck
  • 1 egg
  • 2 tablespoons quick cooking oats
  • 1 (8 oz) can tomato sauce
  • 2 tablespoons finely diced onion
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried marjoram
  • 1/2 teaspoon celery salt
  • 1 tablespoon brown sugar
  • teaspoon Worcestershire sauce
  • 1 teaspoon prepared mustard

DIRECTIONS:
1. In a medium bowl, thoroughly combine meat, eggs, oats, onion, half the tomato sauce, thyme, marjoram and celery salt. Shape into a loaf to fit a 9 by 5 inch loaf pan. Shape it so meat does not touch sides of the dish. Cover with waxed paper. Microwave at high for 5 minutes. Pour off juices.
2. Stir brown sugar, Worcestershire sauce and mustard into remaining tomato sauce. Spoon tomato glaze over the loaf coating the entire top and sides. Give the dish a half turn. Cover with waxed paper. Microwave at low for 20 minutes or until microwave meat thermometer inserted in the center of the loaf registers 170°F.
3. Cover with foil and let stand 5 minutes. Temperature will rise about 10°F during stand time.

Apple Bake Surprise
Microwave Time: 10 minutes HIGH
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 6 baking apples
  • lemon juice
  • 1/2 cup slivered almonds
  • 1/4 cup raisins
  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 6 teaspoons butter or margarine

DIRECTIONS:
1. Wash apples and remove core, making generous cavity in each apple. Remove thin circle of peel around cavity and sprinkle with lemon juice.
2. Mix together almonds, raisins, brown sugar, and cinnamon. Fill cavities with mixture and place each apple in a 3 inch micro proof custard cup.
3. Put 2 tablespoons of water in cup around apple.
4. Dot each apple with 1 teaspoon butter. Cook on HI for 10 minutes Let stand 3 minutes before serving.

 

Pineapple & Lemon Crème
Microwave Time: 6 minutes HIGH
Feeds: Up to 4 to 6 servings

INGREDIENTS YOU’LL NEED:

  • 3/4 cup sugar, divided
  • 3 tablespoons cornstarch
  • 1 can (8 ounce) crushed pineapple, undrained
  • 1 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 2 eggs, separated
  • 1 package (3 ounce) cream cheese, cubed

DIRECTIONS:
1. Mix 1/2 cup sugar, cornstarch, pineapple, and 2/3 cup water in 4 cup glass measure.
2. Cook, uncovered, on HI for 4 to 5 minutes, or until mixture boils. Stir twice during cooking time. Stir in lemon peel, juice, and beaten egg yolks, then stir in cream cheese.
3. Cook uncovered, on medium low for 1 minute. Beat with electric mixer to blend in cream cheese. Cool. Beat egg whites until frothy and gradually add 1/4 cup sugar until peaks form. Fold into cooled pudding.
4. Spoon into dessert dishes and refrigerate until served.

Chili Burgers
Prep Time: 5 Minutes
Grill Time: 15 Minutes
Feeds: Up to 8 servings

INGREDIENTS YOU’LL NEED:

  • 1 1/2 pounds ground beef
  • 1/2 pound Italian sausage
  • 1/3 cup tomato-based chili sauce
  • Salt and pepper to taste

DIRECTIONS:
1. Preheat a grill for high heat. When the grill is hot, lightly oil the grate.
2. In a medium bowl, mix together the ground beef, Italian sausage, chili sauce, salt and pepper. Form 8 balls out of the meat, and flatten into patties.
3. Grill patties for 5 minutes per side, or until well done. Serve on buns with your favorite toppings.

 

Kauai Coast Kahuna Burgers
Prep Time: 5 minutes
Cook Time: 15 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 1 1/2 pounds ground round
  • 1 (6 ounce) can tuna packed in oil, drained
  • 1 large sweet onion, finely chopped
  • 3 tablespoons sweet pickle relish
  • Seasoning salt and pepper to taste
  • 6 hamburger buns, split

DIRECTIONS:
1. Preheat an outdoor grill for medium-high heat. When grill is hot, lightly oil the grate.

2. In a large bowl, mix together the ground beef, tuna, onion, and relish. Season with seasoning salt and pepper to your liking. Form the meat mixture into 6 patties.

3. Place patties on the hot grill, and cook for 6 to 9 minutes on each side, or until cooked through. Serve on buns with your favorite toppings.

 

Salmon Grill Steaks
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Feeds: Up to 4 servings

INGREDIENTS YOU’LL NEED:

  • 4 salmon steaks
  • 3 tablespoons melted butter
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon grated lemon peel
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon salt
  • 1 teaspoon hot pepper sauce

DIRECTIONS:

1. Combine all ingredients except the salmon steaks, in a bowl stirring thoroughly

2. Generously brush both sides of salmon steaks with mixture

3. Oil the griil. Lay seasoned salmon steaks upon grill

4. Cover steaks with silver foil. Barbeque steaks for 8 minutes per side

6. Baste frequently turning once brushing with sauce

 

Spicy BBQ Chicken
Prep Time: 15 Minutes
Cook Time: 15 Minutes
Feeds: Up to 6 servings

INGREDIENTS YOU’LL NEED:

  • 1/3 cup vegetable oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon grated lime zest
  • 2 cloves crushed garlic
  • 1 1/2 teaspoons fresh oregano
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 skinless, boneless chicken breast halves

DIRECTIONS:
1. In a shallow glass dish, mix the oil, lime juice, lime zest, garlic, oregano, red pepper flakes, salt, and black pepper. Add chicken, and turn to coat. Cover, and marinate in the refrigerator for 1 hour, turning occasionally.

2. Preheat grill for medium-high heat.

3. Lightly oil the grill grate. Drain and discard marinade. Grill chicken for 6 to 8 minutes each side, or until juices run clear.


Veggies in a Foil

Prep Time: 15 Minutes
Cook Time: 15-30 Minutes
Feeds: Up to 7 servings

INGREDIENTS YOU’LL NEED:

  • 3 white onions, sliced to 1/4 inch thickness
  • 9 frozen small corn cobs
  • 1/2 pound snow peas
  • 3 tablespoons butter
  • Seasoning salt to taste
  • 2 ice cubes

DIRECTIONS:
1. Lightly oil grill and preheat to high.

2. Place onion slices on a large sheet of aluminum foil; bring up edges of foil a bit to form a foil 'package'. Add corn and snow peas to onions. Place butter or margarine on top, spread out. Season with seasoned salt to taste, then lay ice cubes on top of the whole thing. Seal well in a foil 'packet'.

3. Place foil packet on top shelf of preheated grill while cooking your favorite meats; grill until corn is firm but tender. Open foil packet and serve!
